La sidra fai la segunda formentadura en rimes (xaules con capacid\u00e1 pa unes 500 botelles) dellos meses, pas\u00e1ndose dempu\u00e9s a completar l\u2019avieyamientu en pupitres. Equ\u00ed les botelles van volti\u00e1ndose y entorn\u00e1ndose hasta quedar en posici\u00f3n cuasi vertical, cola borra que se produz na formentadura acumulao nel bocal. Per \u00faltimo faise\u2019l \u00abdeg\u00fcelle\u00bb, procesu que consiste en conxelar el bocal de la botella cola borra y abrila darr\u00e9u. La propia presi\u00f3n del interior del recipiente echa\u2019l xelu xunto a una cantid\u00e1 peque\u00f1a de ll\u00edquidu, que se recupera amestando\u2019l llicor d\u2019espedici\u00f3n.<\/p>\n<p>Pa facer sidra natural esplumoso col m\u00e9todu <em>Charmat<\/em> o granvas tami\u00e9n partimos d\u2019una sidra base clarificao, que se trasiega a un dep\u00f3situ de presi\u00f3n que conti\u00e9n tami\u00e9n el llicor de tiraxe. La segunda formentadura tien llugar nesi dep\u00f3situ, y n\u2019acabando esto f\u00edltriase y embot\u00e9llase.<\/p>\n<p><span style=\"color: #008080\">Con cualquiera de los dos m\u00e9todos ll\u00f3grase un productu frescu y natural, perfeutu p\u2019acompangar con pesc\u00e1u, mariscu, aperitivos y quesos.
