La idea y la so esitosa culminaci\u00f3n d\u00e9bese a V\u00edctor Marchena y Robeca Zrezal, almes de <strong>Kombucha Sede<\/strong>, una planta d&#8217;ellaboraci\u00f3n pequena y artesanal, pionera nel sector n&#8217;Asturies, fundada en Bue\u00f1o (La Ribera) en 2022. \u00abLa intenci\u00f3n foi faer un chisgo a la rex\u00f3n y a la sidra\u00bb, esplica Marchena. \u00abG\u00fastanos trabayar con productu de cercan\u00eda, de kil\u00f3metru cero. Y asocedi\u00f3nos faer esta kombucha con una segunda fermentadura, lenta, con sidra duce d&#8217;un microllagar asturianu\u00bb, en concretu El Romanu, en Po de Llanes, con pumares dientro de la denominaci\u00f3n d&#8217;orixe protexida (DOP).<\/p>\n<p style=\"text-align: center\"><a href=\"https:\/\/estaticos-cdn.prensaiberica.es\/clip\/07a28d53-99d8-4b47-99d8-a1a9a3af1449_16-9-aspect-ratio_default_0.webp\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large\" src=\"https:\/\/estaticos-cdn.prensaiberica.es\/clip\/07a28d53-99d8-4b47-99d8-a1a9a3af1449_16-9-aspect-ratio_default_0.webp\" width=\"880\" height=\"495\" \/><\/a><\/p>\n<p><strong>La resultancia ye una b\u00e9bora non alcoh\u00f3lica y con bien so conten\u00edu n&#8217;azucre.<\/strong> Ye una b\u00e9bora probi\u00f3tica, viva. N\u00f3s faemos una fermentadura lenta, nun alteriamos n&#8217;absolutu&#8217;l procesu de fermentadura natural. N\u00f3s xugamos col tiempu y cola paciencia. Cuando una kombucha industrial puede lleldar n&#8217;una selmana n\u00f3s, m\u00ednimu pel branu, tardamos un mes en llograr la primer fermentadura y pel hibiernu vamos a dos meses y mediu llongures. La segunda fermentadura tien llugar na botella onde, per un sitiu atr\u00e1pase&#8217;l carb\u00f3nicu natural que xenera la mesma fermentadura y a\u00f1edimos zusmios de frutes, granes o fervinchos de flores.
